Heat a frying pan with a spray of oil add beef until brown

Add to slow cooker

Using the same pan soften the carrots and celery/pak choi for a couple mins add the garlic and cook for another min. (Moderate heat)

Add to the slow cooker and cook on low for 8 hours

Great when you have a busy day and you want to come home to dinner.

Add coriander to garnish and have with wedges, couscous or mash.

I added a sweetcorn


Slow cooker beef and apricot tagine

You Need a slow cooker


Olive oil spray
800g diced beef (fat removed)
1 large onion
200 g celery or the firm part of a pak choi (I used both)
300 g carrots
5 garlic cloves
Pinch salt and pepper
1 tablespoon paprika
2 teaspoon ground cumin
1 teaspoon turmeric
1 /2 teaspoon ground cinnamon
Pinch cayenne pepper (optional)
80 g (8) dried apricots
1 x tin tomatoes (400g)
2 tablespoons tomato puree
200 ml beef stock
