chicken fajita pasta

Method

Cook the Pasta according to the packet instructions

In a bowl mix the cumin, coriander, chilli powder, chilli flakes and garlic salt until combined

spray a pan with oil and place over a medium heat, add the chicken and cook until white roughly 5 mins, add the spice mix and tomato puree and combine and cook for 3 mins

add in the sliced peppers, and onion snd the water and mix well, leave to cook for 10 mins for the flavours to infuse, the chicken to cook throughly and the sauce to reduce slightly, the peppers and onion should just be soft.

Drain and rinse the pasta and then combine with the chicken fajita mix serve with a dollop of yogurt

Ingredients

 

400g dried pasta

1 tsp ground cumin

1 tsp ground coriander

1-2 tsp chilli powder (to taste|)

1/2 teaspoon dried chilli flakes

1 tsp garlic salt

low calorie cooking spray or olive oil

3 chicken breasts (add more if required – but change protein/cals)

2 tsp tomato puree

2 peppers -sliced

1 med onion

200 ml water

fat free yogurt (optional)
