Oriental orange chicken

Method

Preheat oven to 200 c

Pat the chicken dry

Add the beaten egg to a bowl (1/2) add cornflour and coat and put into the oven turning at half time.
Cook for 25-30 min.

Put all the source ingredients into a frying pan and slowly bring to a moderate heat and simmer until it thickens

Add the chicken and then sprinkle with spring onions.

I also added oven cooked brocolli – raw brocolli just with one spray of olive oil and cooked in the oven for 5-10 mins. I did this near the end on a slightly lower heat.

I added the sweetcorn and green beans – you can steam or lightly bring to boil until el dente and then just stir fry with 3/4 tablespoon of granny chilli flakes – cautious with the amount as it’s oil based.

1 x pack of chicken thighs (600g)
1 egg beaten ( only need half)
3 tablespoon cornflour
Olive oil spray
1 x spring onion to garnish (optional)

Sauce
200 ml fresh orange juice
200 ml chicken stock (1 x cube)
2 x tablespoon light soy
4 x tablespoon honey or brown sugar
Zest of a orange
1 tablespoon cornflour
2 garlic cloves crushed
1 tablespoon grated ginger (small chunk)
Pinch of red chilli flakes / to taste.
