Tex mex meat balls
Method
Add the mince, 1/2 the cheese, breadcrumbs, egg, cumin, garlic and salt and pepper if desired (option add a jalapeño pepper to make it have a bit of kick, and the egg
combine and form meatballs
in a large pan/skillet on a med/high heat add a teeny drizzle of oil and sear on both sides for 2 mins.
remove and add to a plate
In the same pan add a onion and cook until soft add crushed tomatoes and paprika and bring to the boil then reduce heat and add the meatballs back to the pan cook the meatballs through until fully cooked (10 mins ish)
add the remaining cheese and cover the pan until cheese melts.
done!
serves 4 can serve with salad or bread.
